In 2006 we were blessed with ideal weather conditions that enabled us to pick grapes at their optimum levels of ripeness and to keep the wine stored in separate parcels in the winery to bring out their very finest. Under the sure hand of our French winemaker, Sandrine Gimon, this wine was then able to be blended in accordance with Bordeaux flair, producing a delicious alliance between Cabernet Sauvignon, Merlot and Cabernet Franc to give a finely constructed wine with great breadth of flavours.
Cabernet Sauvignon endows the 2006 Rymill Coonawarra mc² with its outstanding framework, giving the wine a good tannin structure that enables all the flavours to fall into alignment. Merlot gives softness and fruitiness, hinting at berry fruits and rose petal, while Cabernet Franc introduces an element of spiciness including peppermint and cloves.
