‘A curious vintage’Cabernet Sauvignon

Rymill Coonawarra 2005 Cabernet Sauvignon

2005 was a curious vintage in Coonawarra. The preceding summer was cool, but culminated in an unusually warm March. This encouraged the grapes to make a final sprint into ripeness, however, the sugar levels rose more rapidly than the flavours. Fortunately the vines were in excellent condition, which allowed the winemakers to delay harvest until the flavours had caught up and were fully developed. The result now is a beautifully balanced wine.

Rymill Coonawarra winemaker, John Innes, recently previewed the 2005 Cabernet Sauvignon and declared it to be ‘an extremely good wine. It has an excellent flavour profile, with lovely varietal characteristics, and structurally it is typical of a traditional Coonawarra cabernet sauvignon. This is a youthful wine that will develop beautifully in the bottle. It really is a classic Coonawarra cabernet.’
