Assistant winemaker Federico Zaina and winemaker Sandrine Gimon head the winery team who are based in the winery that adjoins the cellar door. In fact they are separated only by extensive glass windows.

Elevated internal observation balconies also provide visitors with the opportunity to view the winemaking process, where modern stainless steel fermenters contrast with traditional oak barrels.
As a bonus, the cellar crew can usually be seen and heard at work!
