Winemaker Sandrine Gimon describes her preparation of the complete, blended wine:
"During the elévage, or maturation, we monitor and assess the wine through a constant quality control system, including laboratory analysis and regular tastings. We are continuing a relationship with the wine, one started in the vineyard, which culminates in creating an assemblage in line with Rymill Coonawarra's style."
The filtered and finished wine is then dispatched by road tanker for contract bottling in the Adelaide area, where the necessary specialised services are available. Once packaged, it is also warehoused there, for logistical convenience, prior to dispatch for retail sale or export.
And a final word from Sandrine:
"After the bottling, when the wine has achieved its majorité you are still responsible for it; this is still your work, because you are the winemaker. There is a big satisfaction in following the wine; it's a great pleasure to see the customer's response to your work."
