John Innes
John Innes realised his schoolboy goal of becoming a winemaker when he graduated in wine science from Charles Sturt University, Wagga Wagga, NSW in 1985. After considerable industry experience, both in Australia and overseas, he joined Rymill Coonawarra as general manager in 1989, to make his first vintage here in 1990.
John occasionally puts pen to paper to record his winemaking philosophy, some examples of which follow:

Nil Nimis
“In Roman times this subtle balance was referred to as nil nimis, or ‘nothing in excess’, and for me this remains the fundamental principle of accomplished winemaking.”
